Cake Mix Zucchini Bread?  Yep… you read that right!  This EASY Cake Mix Zucchini Bread Recipe is the solution for those bread cravings!  It’s moist, perfectly spiced, and is packed full of zucchini flavor!  Trust me… it disappears fast!

Made with real zucchini, this delicious bread is perfect for a breakfast on-the-go, dessert, or an after-school snack.  Plus… it really couldn’t be any easier to make than this!

Cake Mix Zucchini Bread Recipe

Ingredients

  • 15.25 ounces Betty Crocker Super Moist Yellow Cake Mix 1 box
  • 2 tablespoons ground Cinnamon
  • 1/2 cup Canola or Vegetable Oil
  • 1/4 cup Milk
  • 3 Eggs
  • 2 cups coarsely shredded Zucchini about 2 medium

Instructions

  • Preheat oven to 350 degrees.
  • Slice off the bottom end of the zucchini and leave the stem end intact.
  • Using the side of your box grater with the largest holes, grate the zucchini until only the stem remains.
  • In medium mixing bowl, add powdered Cake Mix, Cinnamon, Milk, Eggs, and Oil, and stir until well combined.
  • Add zucchini, and mix well.
  • Spray bottom and sides of 8×4 or 9×5 Non-stick Loaf Pans with Nonstick Cooking Spray. Evenly pour mixture into 2 loaf pans.
  • Bake for 45 – 50 minutes, or until toothpick inserted in center comes out clean.
  • Allow to cool in pan for 5 minutes, then transfer loaf to a wire rack to finish cooling. Enjoy!
