Scrambled Eggs in a Mug
Ingredients
- 2 Eggs
- Optional Toppings: Salt Pepper, Shredded Cheddar Cheese, Salsa
Instructions
- Spray inside of coffee mug with nonstick cooking spray.
- Crack 2 Eggs and pour into mug.
- Whisk Eggs with a fork.
- Microwave for 45 seconds, stir, then microwave approx. 30 more seconds, or until done. {just keep an eye on your Eggs, as coffee cup sizes can vary, and every microwave is different}
- Let Eggs cool.
- Top with Shredded Cheese, Salsa, Salt, and/or Pepper. ENJOY!

I’ve been making nearly everything in my microwave oven for the past three years, not having had a kitchen in that time (moving to a real apartment with a REAL kitchen, in ten days—so excited!)
I dislike the cooking sprays in general, so I butter the inside of whichever vessel I’m using (for any microwave cooking), and it’s great because it adds that wonderful flavor, as well as fitting perfectly into my keto lifestyle.
I also make a small keto chocolate mug cake a few times a week–recipe found on Pinterest a month ago—and I butter the mug it goes into, which adds that extra dimension of flavor again.
It’s going to take a bit for me to get used to cooking on a stove after being so used to my microwave, so in the interim, I’ll be using “recipes” such as this one to get me through the “retraining” period (I’m a very experienced cook, having been taught by my parents 60 years ago, at the age of eight).
