Cake Mix Zucchini Bread Recipe
Betty Crocker Super Moist Yellow Cake Mix 1 box
Canola or Vegetable Oil
coarsely shredded Zucchini
about 2 medium
Preheat oven to 350 degrees.
Slice off the bottom end of the zucchini and leave the stem end intact.
Using the side of your box grater with the largest holes, grate the zucchini until only the stem remains.
In medium mixing bowl, add powdered Cake Mix, Cinnamon, Milk, Eggs, and Oil, and stir until well combined.
Add zucchini, and mix well.
Spray bottom and sides of 8×4 or 9×5 Non-stick Loaf Pans with Nonstick Cooking Spray. Evenly pour mixture into 2 loaf pans.
Bake for 45 – 50 minutes, or until toothpick inserted in center comes out clean.
Allow to cool in pan for 5 minutes, then transfer loaf to a wire rack to finish cooling. Enjoy!
