Ingredients
4poundsPotatoes, peeled and slicedabout 8 medium potatoes
1/2cupButter, melted
1/3cupMilk
3teaspoonsSalt
1/2teaspoonPepper
1 1/4teaspoonsGarlic Powder
5cupsWater
Instructions
Peel potatoes and cut into 1 inch thick slices.
Place potato slices into the bottom of the instant pot.
Cover with 5 cups water and add 1 1/2 teaspoon of salt.
Place the lid on the instant pot and set the valve to seal.
Select “Pressure Cook” setting, select “High Pressure,” and change cooking time to 8 minutes.
Preheat will start 10 seconds after settings are selected.
Once potatoes are done, do a quick release for the pressure (I like to do a gradual quick release to avoid any messy splatters... basically a quick release of steam in a few gradual nudges).
Drain the potatoes and return to the instant pot.
Mash the potatoes with a hand held masher.
Add the remaining salt, pepper, garlic powder, butter, milk and sour cream to the potatoes, and stir with a large spoon. Enjoy!
