Ingredients
2cupsall-purpose flour
1 1/2teaspoonsbaking powder
1/2teaspoonbaking soda
1teaspoonground cinnamon
115-ounce can pumpkin
3/4cuplight brown sugar
1/4cupcanola oil
1/2cuporange juice
1eggbeaten
1tablespoongrated orange rind
1/2cupnonfat plain yogurt
1 1/2cupsfresh cranberriescoarsely chopped
Instructions
Preheat oven 400°F. Line muffin pan with papers, or coat with nonstick spray.
In bowl, combine flour, baking powder, baking soda, and cinnamon.
In another bowl, combine pumpkin, brown sugar, oil, orange juice, egg, and orange rind. Add with yogurt to dry ingredients, stirring just until dry ingredients are moistened. Fold in cranberries.
Spoon batter into muffin tins, filling each about 3/4 full. Bake 20–25 minutes or until done.
