  • 2½ cups All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • ½ teaspoon Ground Cinnamon
  • 1 cup Old-Fashioned Oatmeal
  • ½ cup Honey
  • ½ cup Light Brown Sugar
  • ⅓ cup Canola Oil
  • 2 Eggs
  • ½ cup Skim Milk
  • 1 teaspoon Vanilla Extract
  • 1 (12-ounce) package fresh Cranberries, chopped
  • ⅔ cup Chopped Pecans
  1. Preheat oven to 350°F.
  2. Coat 9x5x3-inch loaf pan with nonstick cooking spray.
  3. In bowl, stir together Flour, Baking Powder, Baking Soda, Cinnamon and Oatmeal.
  4. In large bowl, mix together Honey, Brown Sugar, Oil, Eggs, Milk and Vanilla. Stir in Flour mixture until moistened. Stir in Cranberries and Pecans.
  5. Pour batter into prepared pan.
  6. Bake 40-45 minutes, or until toothpick inserted in center comes out clean.
